Pineapple Cookies and Quail Eggs Scrambled – Toddler Meal Challenge Day 52- 53

I have been madly busy over the past 1 week. And I am finding it hard to keep up with the challenge at times. But we still manage to do something new every day. I had some leftover dried pineapple and some all spices left so I did these cookies yesterday. They were light and fluffy and Sarah loved them. I thought she would spit the pineapple chunks but she in fact ate all of them. She has got used to finding these surprises within her cookies. It amuses her at times  but she has them. Except for her morning cereal and scrambled eggs, I guess these cookies has been her meal all day. I had to force feed her some curd rice for dinner. But she still pointed at the cookie box and told me she wanted more. I am worried at her new found interest in cookies and chocolates but that’s kids I guess.

Ingredients for Pineapple Cookies

Butter- 225 g

Caster Sugar- 140 g

Egg Yolk- 1

Pineapple Juice- 2 tsp

All Purpose Flour- 280 g

Ground Cinnamon- 1/2 tsp

Mixed Spice- 1/2 tsp

Salt- a pinch

Dried Pineapple Chopped- 100 g

Directions

Put the butter and sugar in a bowl and beat well with a hand whisk. Now beat in some egg yolk and pineapple juice. Sift some flour, cinnamon, spice and salt in a different bowl and add it to the whisked liquid ingredients. Add the dried pineapple and knead the dough into a long  cylinder shaped roll. Cover with a clingfilm and refrigerate the dough for 30- 60 minutes. Preheat the oven at 190 degrees. Line two baking sheets or baking trays with parchment paper. Unwrap the refrigerated dough and slice them into 1/2 inch slices. Place the cookies widely apart as they will expand later. Bake for 10-15 minutes till the cookies are golden brown. Cool them over a wire rack before removing them using a knife. Store in a airtight container.

For today, we made some scrambled quail eggs. Wuail eggs are known for their medicinal properties and highly recommended for kids. It is beleived to be 1000 times nutritious than hen;s eggs. For the saying in malayalam goes like this- ” 1000 hens equal 1/2 a quail” which means even if you consume half a quail it equals the benefits you get from consuming 1000 hens. While I am not an expert on the medicinal properties of quails, I still follow our family customs and try feeding Sarah quail eggs. Now don’t misunderstand the proportions here, these eggs might be tiny but 1 will do for a day.

If I manage to scramble one, it looks so less, but since Sarah is aversive to eating anything non-veg I guess this quantity works well with us. I don’t give her sunny side up but I did click a pic for you people to understand how tiny this egg is.

What I usually do is scramble this egg with some salt and pepper and add it to Sarah’s daily cereal or soup. But I also tried doing a french toast with three quail eggs and Sarah is ok with them.  The recipe for this is just the normal way of scrambling eggs so I am not gonna write it out like I normally do. Just heat few drops of oil and add a whisked quail egg. Scramble it with some salt and pepper and you are good to go.

Our vacations have been postponed to the 26th of December. So I will be around. And I am working till 25th :) so I don’t mind posting more stuff.
