Omelet Soup- Toddler Meal Challenge Day 30

What do you do when your stubborn toddler refuses to eat, I get thoroughly disappointed. I make it my personal mission to feed her what she refuses to eat. But I don’t do this mercilessly, by threatening her or something. I trick her and feed her all that she refused in a different form. So today she threw the omelet and her boiled veggies. I made a soup out of it. I had already boiled the vegetables and reserved the stock for  a red lentil soup. But I changed plans mid way and made this soup. I even pureed the soup so that she sees no trace of the food she rejected.  I waited till she was extremely hungry and offered her the soup. She had it though she kept looking at me suspiciously. No wonder they have the term mother in the quote ” Necessity is the mother of invention”. I don’t mean that men don’t invent but in dire situations like this it takes a mothers to come out with such weird combos.

Ingredients for Omelet Soup

Omelet- small one (yes you need to make one)

Bottle gourd- 1/2 cup diced

Onion- 2

Carrot- 1

Apple- 1/2

Potato boiled- 1 small

Sweet Potato diced- 1/4 cup

Red lentils- 4 tbsp

Butter- 1 tsp

Pepper- a dash

Basil- a dash

Fresh Cream- 4 tbsp

Directions

Pressure cook the lentils with potato, bottle gourd, apples, sweet potato, carrot with 2 cups water, salt and pepper. Drain the veggies  and separate the stock with lentils. Heat butter in a pan and add the diced onions.When the onion softens, add the boiled veggies and saute them for a minute. Now add the roughly chopped omelet and cook the veggies and omelet together. Add a little basil and pepper and transfer the contents to the pan with vegetable stock. You can add 1/4 cup oats to this soup but I omitted oats today. Bring the soup to boil, add the cream and let it simmer for 10 minutes. Switch off the flame and let the soup cool down. Puree the soup and serve it immediately.

I think the soup tasted just like the lentil soup except for the omelet. I think biting into bits of omelet would have felt nice had Sarah loved eggs. So for kids who love eggs I suggest you don’t puree the omelet. With this recipe we complete a month. I have compiled a list on hacks for toddler feeding which I will post tomorrow. We have a party tomorrow and I have planned some snacks for Sarah. She likes to eat what we adults have but our spice levels upsets her, so I am planning to do a non- spicy version of snacks for her.
